I'll let you all into a secret, I've never really been much of a baker. Shocked? Well you won't be after I tell you that it once took me three attempts to make chocolate Easter nests as I kept scorching the chocolate, turns out you should suspend your bowl in the saucepan and not let it touch the bottom! Baking faux pas out in the open I must say that I'm a huge fan of the constant occasional sweet treat with cakes and the like being my ultimate fave so when the beauties at Baking Mad* got in touch I knew it was time to roll up my sleeves, if at first you don't succeed...

With tubes of icing and jelly tots in my possession I decided to keep things simple and bake a classic, something that you could enjoy with afternoon tea, at a BBQ or even at a picnic, my bake of choice? A victoria sponge cake. This victoria sponge recipe was incredibly easy to follow and before I could say Mary Berry my mixture was in the oven whilst I kept everything crossed - if I can make a mistake melting chocolate you never know what's going to go down. Thankfully nothing cray cray happened and my cake turned out a treat, I even got arty with icing and jelly tots to create a pretty flower.

As the saying goes the proof is in the pudding so I rather proudly popped round to my besties and the sort of in-laws with cake in hand - the bestie is a seasoned baker of all things scrumptious so when she commented on how light and tasty my sponge was I knew I'd done a sterling job. I suppose a good sign of tasty baking is when the goods don't last long and I must say my cake was devoured in two days flat and not just by me, I promise.

I already feel more confident in my baking ability and have not only been on the hunt for pretty cake tins but have also lined up my next cake recipe to try. I may not be stepping on my favourite cake makers toes anytime soon but we've all got to start somewhere, watch out Fancie...
